Last year while finalising the menu for my son's birthday party I found this veggie pops recipe by Vah Chef. The description and demonstration was done so nicely, I tried these pops with little variations in the ingredients, and they came out super yummy!!!!

Here is the list of ingredients used

Ingredients:
  • 1/2 bowl finely chopped veggies of your choice (I used beetroot, beans, capsicum, peas and corn)
  • Mint leaves 15-20
  • Coriander leaves few
  • Mixed herbs( oregano basil thyme) 1/2 tbsp
  • Salt as per taste
  • Black pepper
  • Semolina 1/2 bowl
  • 1 bowl water
  • Oats for binding
  • Maida 1/4 bowl
  • Oats flour 3 tbsp
  • Bread crumbs 2-3 tbsp.
Method:
  • In a wok take a tbsp of oil.
  • Cook veggies, for a min, add mixed herbs, mint leaves, coriander leaves, salt and pepper.
  • Add semolina and water. Cover and cook till water is absorbed by semolina. Add oats for binding. Divide into equal portions and roll into balls.
  • Mix All purpose flour bread crumbs, oats flour and salt as per taste. Coat the balls in this.
  • Take a big strainer put the coated balls in it
  • Dip it in hot boiling water just for few seconds
  • Coat again with All purpose flour and repeat this process thrice ( this gives extra crunch).
  • After dipping third time coat only with bread crumbs
  • Deep fry till golden brown and drain on absorbent paper.
  • Enjoy them hot with lots of tomato ketchup
