Earl Grey tea is a tea blend with a distinctive citrus flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit.

The leaves have a warm, fresh, aromatic, sweet flavour with a cool aftertaste, and are used in teas, beverages, jellies, syrups, candies, and ice creams.
Eggless Earl Grey and Mint Cake
Ingredients:
- 1/2 bunch fresh mint leaves
- 4 tea bags earl grey tea
- 1/2 cup water
- 1 1/2 cup all purpose flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 100 gms butter ( at room temperature)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp orange juice concentrate
- 1/4 cup butter milk
Direction:
- Boil mint leaves in water and reduce it to half.
- Add 3 tea bags in this water and let it brew for 5-7 mins. Keep aside.
- In a bowl cream together butter and sugar.
- In a separate bowl sift flour, baking soda and baking powder .
- Fold this sifted flour into creamed butter and sugar gently.
- Add brewed tea and mint concentrate,orange juice concentrate , vanilla extract , buttermilk and mix well ( Do not overbeat)
- Empty one tea bag of earl grey and some crushed mint leaves into the batter.
- Pour this batter in a greased tin.
- Bake for 25-30 min at 180 degree c in a preheated oven. Let it cool for 15 in the dish and then invert onto a rack and cool completely before serving.
