Ker Sangri Kumathiya - A Rajasthani Delicacy!
These are dried berries grown abundantly mainly in Western Rajashtan. Ker ( dried unripe fruit),Sangri ( dried wild beans), Kumathia ( dried flat pods) are cooked with whole red chillies and Raw mango powder.This is also known as Paanchkuta because of this combination.
Ingredients:
- 1 bowl mixed ker sangri and kumathiya.
- 3 tbsp mustard oil (preferably mango pickle oil)
- 1 tsp cumin seeds
- 2 whole red chillies
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 2 tsp dry mango powder
- A pinch of asafoetida
- 1 tsp red chilli powder
- Salt as per taste
- 2 tbsp curd
Method :
- Clean beans thoroughly and soak them overnight.
- In a pressure cooker add 2 cups of water and a spoon of salt and cook beans till 2 whistles.
- Drain and keep aside.
- In a wok heat oil.
- Add cumin seeds,whole red chillies,asafoetida,turmeric powder,coriander powder,chilli powder,salt ,dry mango powder and curd.
- Saute for 2-3 mins.
- Add boiled beans, mix well and cook for 5-10 minutes.
Serve hot with missi roti
