Cheesy Bread Pops

A quick snack/appetizer for kids that can be made in a jiffy when you are running out of time.
Ingredients:

  • 4 slices of brown bread.
  • 1/2 bowl mozzarella cheese
  • 1 medium sized boiled and mashed potato
  • 1/4 cup assorted finely chopped vegetables of your choice( I have used corn, bell peppers and tomatoes)
  • 1/2 tsp Black pepper powder
  • Salt to taste
  • 1 tbsp oregano seasoning
  • 1 tbsp tomato ketchup
  • Candy sticks/cake pops stick

Preparation time :10 minutes
Cooking time :10 minutes
Yields: 4 bread pops
Kitchen equipments required: round cookie cutter, knife, chopping board, grater


Directions:
  • In a mixing bowl add boiled potato and 2-3 tbsp grated cheese, black pepper powder, salt and oregano seasoning, mix well and keep aside.
  • With the help of a cookie cutter cut round slices of bread.
  • Spread tomato ketchup on one slice, top it with 1 tbsp of cheese and potato mixture.

  • Cover this with another bread slice and lightly press it with your hands.

  • Now put some grated cheese and vegetables of your choice on the top slice.



  • Sprinkle some black pepper powder and oregano seasonings.
  • Preheat the oven for 10 minutes.
  • Bake for 6-7 minutes at 180 degree C
  • Insert sticks in the center between the two slices and lightly press it with your hands.


  • Serve immediately.

Mac & Cheese Muffins

A fun way to eat your favourite and  irresistible mac & cheese with creamy bechamel sauce in an easy to make, individual serving muffins.

Mac & cheese muffins
Ingredients:
  • 100 gms cooked elbow macaroni
  • 1 tbsp whole wheat flour/ all purpose flour
  • 1 tbsp plus 1 tbsp butter 
  • 1 cups milk 
  • 1/2 cup plus 1/4 th cup shredded mozzarella 
  • 1/4 tsp crushed black pepper 
  • 1/2 tsp oregano 
  • 1/4 th cup sweet corn 
  • Salt to taste 
  • 1-2 tbsp. bread crumbs
Preparation time : 10-15 mins
Cooking time : 30 mins
Yields : 4-5 muffins



Directions :

  • In a heavy bottom pan heat butter, add flour and stir in milk to make a lump free sauce. 
  • Add salt, pepper and oregano, cook for 2-3 minutes till the sauce gets thick. 
  • Add cheese and cook over low heat till the cheese is melted. 
  • Stir in cooked macaroni , sweet corn and mix well.
  • Line a muffin tray and spoon 2-3 tbsp. of mac & cheese into the moulds. 
  • Sprinkle some grated cheese and some bread crumbs and 1/2 tsp butter over the top of each muffin.
  • Bake for 25-30 mins at 190 degree C in a pre- heated oven. 
  • Serve hot

Double baked creamy herbed potatoes

Cheesy oozy Homestyle double baked potatoes.....with the zing of garlic!!
Ingredients:

  • 4 medium sized potatoes halved
  • 100 gms  crumbled cottage cheese
  • 1 medium onion finely chopped
  • 1 spring onion chopped
  • 3-4 cloves minced garlic
  • 1/4 bowl fresh cream
  • 1/2 tsp dried rosemary
  • 1/2 bowl grated mozzarella
  • Few coriander leaves
  • Salt to taste
  • 1/4 tsp Black pepper or to taste
  • 1/2 stick butter
  • 2 tbsp olive oil

Method:

  • Preheat oven at 200 degree C.
  • Rub potatoes with butter and bake them for 40-45 minutes or till tender.
  • Scoop out the insides of the potatoes carefully, make sure you do not tear the skin.
  • Mash the scooped out potatoes and keep aside.
  • In a wok heat olive oil add minced garlic, onion and saute for few minutes.
  • Add mashed potatoes along with cottage cheese, dried rosemary, coriander leaves, salt and pepper, spring onion, cream and  half of the grated mozzarella, cook for 2-3 minutes. 
  • Spoon this filling into potato cavity, top it with remaining grated mozzarella and bake again for 10-15 minutes.
  • Garnish with spring onion and serve.
