Ker Sangri Kumathiya

Ker Sangri Kumathiya - A Rajasthani Delicacy!


 
These are dried berries grown abundantly mainly in Western Rajashtan. Ker ( dried unripe fruit),Sangri ( dried wild beans), Kumathia ( dried flat pods) are cooked with whole red chillies and Raw mango powder.This is also known as Paanchkuta because of this combination.


Ingredients:
  • 1 bowl mixed ker sangri and kumathiya.
  • 3 tbsp mustard oil (preferably mango pickle oil)
  • 1 tsp cumin seeds
  • 2 whole red chillies
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 2 tsp dry mango powder
  • A pinch of asafoetida
  • 1 tsp red chilli powder
  • Salt as per taste
  • 2 tbsp curd



Method :
  • Clean beans thoroughly and soak them overnight.
  • In a pressure cooker add 2 cups of water and a spoon of salt and cook beans till 2 whistles.
  • Drain and keep aside.
  • In a wok heat oil.
  • Add cumin seeds,whole red chillies,asafoetida,turmeric powder,coriander powder,chilli powder,salt ,dry mango powder and curd.
  • Saute for 2-3 mins.
  • Add boiled beans, mix well and cook for 5-10 minutes.



Serve hot with missi roti
