Rich, moist, egg-less chocolate cake that i made on my son's 7th birthday.
The recipe is simple but the cake is very special to me, so decided to share the pics and recipe here.
I also made his favourite party poppers, veggie pops, nutella fantasy, mocha cookies for the party.
Will share the recipes for other dishes I made for the party very soon.
Egg-less Chocolate cake with nutella frosting
Ingredients:
Dry ingredients:
1/2 cup wheat flour
1/2 cup all purpose flour
1 cup powdered sugar
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
Wet ingredients:
1/2 cup oil
1/2 cup milk(room temperature)
1/2 cup water(room temperature)
1 1/2 tbsp curd
1 tsp vanilla essence
Directions:
In a mixing bowl sift together all the dry ingredients, keep aside.
In an another bowl, add water and oil, whisk till completely incorporated, add milk and curd to this mixture, add vanilla and whisk well.
Now fold the sifted flour mixture into the wet ingredients gently.
Pour this batter into a greased baking dish.
Bake for 30-35 minutes in a pre- heated oven at 170 degree C.
Let it cool for 15 minutes in the dish and invert onto a rack and let it cool completely before doing the frosting.
I made two cakes with the same proportions and frosted it with nutella, added fresh fruits in the middle and decorated with all his favourite goodies :)
