Earl Grey and Mint leaves Eggless Cake

Earl Grey tea is a tea blend with a distinctive citrus flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit.
Traditionally, the term "Earl Grey" has applied only to black teas that contain oil of bergamot as a flavouring.(Source :Wikipedia)

Mentha (also known as mint, from Greek míntha, is a genus of plants in the family Lamiaceae (mint family)Mints are aromatic, almost exclusively perennial, rarely annual, herbs. The leaves have a warm, fresh, aromatic, sweet flavour with a cool aftertaste, and are used in teas, beverages, jellies, syrups, candies, and ice creams.


Eggless Earl Grey and Mint Cake


Ingredients:
  • 1/2 bunch fresh mint leaves
  • 4 tea bags earl grey tea
  • 1/2 cup water
  • 1 1/2 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 100 gms butter ( at room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp orange juice concentrate
  • 1/4 cup butter milk

Direction:
  • Boil mint leaves in water and reduce it to half.
  • Add 3 tea bags in this water and let it brew for 5-7 mins. Keep aside.
  • In a bowl cream together butter and sugar.
  • In a separate bowl sift flour, baking soda and baking powder .
  • Fold this sifted flour into creamed butter and sugar gently.
  • Add brewed tea and mint concentrate,orange juice concentrate , vanilla extract , buttermilk and mix well ( Do not overbeat)
  • Empty one tea bag of earl grey and some crushed mint leaves into the batter.
  • Pour this batter in a greased tin.
  • Bake for 25-30 min at 180 degree c in a preheated oven. Let it cool for 15 in the dish and then invert onto a rack and cool completely before serving.
